Nestled at the top of British Properties in West Vancouver is the quintessential fine dining establishment that showcases an exquisite atmosphere, unparralleled views and amazing cuisine. Chef Jefferson, who has worked at some of the world’s top restaurants, has proven that a self -trained chef can hold his own among the best. This tasting menu is available however there is a a la carte menu as well. Bring your out-of-town guest and leave them thinking we live in the greatest place in the world.
Let’s start with a couple cocktails:
Italian Greyhound: ruby red grapefruit vodka, campari, pink grapefruit juice
Pear Mojito: bacardi white rum, marinated anjou pears, fresh mint, limes, soda
Manchego Puff with Tomato Powder
House-Made Bonito Salad with Green Grapes
Ahi Tuna Ceviche in a Soursop Marinade with Hearts of Palm
Braised Octopus with Saffron Tapioca Crackers (this was freakin’ delicious!)
Nitro Fois Gras with Amarena Cherries and Brioche: We had something similar at Momofuko’s Ko and this was just as delicious
Duck Heart Salad with Horseradish Foam and Crispy Leeks
Smoked Sturgeon with Tomato Relish: This was out of this world!
Muskox Coffee Crusted with Fiddleheads and Elderberry Jus: Another dish that will have us back again!
Fois Gras Panna Cotta
One more thing to mention is that the wine pairing was excellent! Probably one of the best we had in the city. So cudos to Sommolier and Manager Philippe Reigh.
